The Şakiroğulları family has cooked over live charcoal since 1962. This is their table in Abu Dhabi.

The house

An oba is a gathering —
a hearth the tribe travels with.

We built ours on the Al Zahiyah corniche: a long marble hall under a hand-painted vault, turquoise banquettes, brass lanterns, and an open fire at its centre. Nothing on the menu is fusion. Everything on it is ours.

Meat is butchered in-house and rested before it ever meets the mangal. Bread is stretched to order and baked against stone. Tea arrives in a copper samovar and never stops arriving.

The ritual

Çay is not
the end of dinner.

It is the reason
no one leaves.

Rize leaf, double-boiled in copper, poured tavşan kanı — rabbit-blood red — into tulip glass.
